This is currently my breakfast Mon-Fri and I can't get enough of it. It's so tasty, quick to make and best of all, I prepare it on Sundays and my breakfast is done for the rest of the week.
Overnight oats is a great everyday recipe filled with protein, slow carbs, fibre and keeps you full until lunchtime. They last for a week in the fridge and only takes 5 min to make. I love waking up and not having to worry about preparing breakfast. I simply just take the oats out of the fridge, top it with berries and I'm good to go.
Overnight oats are a nutrient dense food, which makes you feel more satiated.
If you’ve never had overnight oatmeal, they’re basically a no-cook method of making oatmeal. So, instead of cooking oatmeal on the stovetop or in the microwave, you soak the raw oats with your option of milk or in this case coconut water. That soaking process allows the oats to absorb the liquid and soften them enough to eat uncooked. You only need to let the oats soak and rest in the fridge for 2 hours. But, it’s ideal if you soak it overnight…hence the name overnight oats!
Blueberry Overnight Oats
Ingredients
1 cup of rolled Oats
1 scoop of Protein Powder
1 scoop of Creatine (optional)
1 tbsp Chia Seeds
1 cup of Coconut Water (or your option of milk)
40g Blueberries
Instructions
Mix your dry ingredients (oats, protein powder, chia seeds, creatine)
Pour in the coconut water and mix well.
Place in the fridge for at least 2 hours
Take out and top with blueberries or your favourite fruit/berries.
