Even though this is not really sushi, it's a sushi-inspired recipe that is way faster and easier to make than actual sushi. You can replace the protein with tuna or chicken if you prefer that.
This recipe is so easy to make, so delicious, and doesn't take long at all to make. You can get creative with the ingredients and replace the protein and choose your favorite vegetables with it. I recommend trying it with kimchi instead of the pickled jalapenos as well!

Salmon Sushi Rolls
Ingredients
1 Salmon Fillet (we buy them frozen from Aldi)
150g Cooked Rice
50g Cucumber
20g Pickled Jalapenos
20g Crunchy Coleslaw
4 Yaki Nori Sheets
10 ml Soy Sauce
Kewpie Mayonnaise 50% Reduced Fat (Coles)
Section 2: Add Numbered Directions
Start by cooking your salmon, either in the oven or air-fry for 10-15min, 240C.
Add 150g of rice in a bowl, heat up in the microwave
Cut up the Yaki Nori Sheets into 4 squares.
Add cucumber, pickled jalapenos, crunchy coleslaw, cooked salmon, soy sauce, and kewpie yuzu mayo.
Mix the ingredients and fill the yaki nori sheet like a taco.
